I haven’t signed up for hosting or built site yet. Terms say you can’t transfer register for 2 months, but I want to use Host gator.

You csn do that with transferring your domain name or just with changing its DNS settings. Both work for you.

I would suggest register domain name separately to avoid any potential issues. For hosting part, hostgator is good, remember to use this hostgator coupon when you sign up http://www.webhostpark.com/hostgator-coupon
As others have said, registering a domain and webhosting are entirely separate (although often offered as a package).
If you change contact details on a domain, you are then not allowed to transfer it to another registration account within 2 months (in case of fraud – your account may be hacked, the two months is like a cooling off period for the account owner to realise that they may have been hacked).
You can however, point your domain (via DNS settings) wherever you like (different host servers) and change it as often as you like assuming your registration service has the facilities to allow you to make those changes yourself – as long you you don’t transfer the domain away to a different account. To transfer the domain, you have to get a ‘key’ code from the registrar – then give this to your new registrar to authenticate the transfer.
Hostgator is a hosting service so you can go ahead and open a hostgator hosting account, then point your domain at the hostgator server (via nameserver settings or server IP address).
If you really want your hosting and registration together then you will have to wait to transfer the domain to Hostgator – but I stress that there is no need to do this. In fact if you plan to acquire more domains, I think it is better to keep the two things separate – I wrote a short article about that very subject linked below…
